It was in 1949 that the cooperative winery of Saint-Martin was built, under the chairmanship of Auguste Castan. At that time, only the denomination "Table Wine" existed on the market. Incidentally, the first harvest of grapes was brought in while the winery was still being built. As the roof was not yet in place, a volunteer from Roquefort would spend the night in the winery to guard the vats and the precious grapes.
So much time has passed and so much has been achieved since that month of May 1949 when it all began! Aong the most notable events of these last 50 years, we should note the acquisition of the village's 2nd cooperative winery, now transformed into a wine shop, to create the "Celliers Saint-Martin", the first bottled wines in 1955 and, above all, that essential event that was the awarding of the Corbières appellation.
The constant quest for improvement on the part of the directors combined with the large-scale investments on vines and winery facilities by the member vine-growers have enabled the Celliers St-Martin to rank today among the best producers of the Corbières appellation. Major work was launched in 1975 on identifying potential, selecting vines and improving wine-making techniques, with the technical backing of the Chamber of Agriculture of the Aude area. The determination to modernise production while continuing to respect the age-old traditions, to seek to make constant improvements to quality while ensuring perfect hygiene conditions and optimal customer satisfaction - these are the priorities of the Board of Directors and the permanent staff.
